I have never been particularly fond of nachos. The guy that I live with loves nachos. Problem.
So, I decided to make some nachos that I could approve of. The result: Lime Grilled Chicken Fajita Nachos a la Elise(ita). Problem solved.
-Rub 1 1/2 skinless boneless chicken breasts with lime juice, fajita seasoning, freshly ground black pepper, and cilantro; grill and shred
-Sautee 1 diced onion, 1/2 green pepper, 3 cloves garlic, and diced jalapenos; add spices to taste
-Start layering on a greased pan...chips, cheese, salsa, veggies, chicken, cilantro, more cheese, repeat
-Bake @ 300 until crispy & melty
Serves two for supper...if one of them is very large and the other is very small, and they are still recovering from splitting an entire pint of Ben & Jerry's Half Baked ice cream earlier that evening.
